Baba Ganoush (Eggplant Dip)
I often make a big batch of this beautiful dip … a fabulous ‘go-to’ recipe for easy entertaining.

Baba Ganoush (Eggplant Dip)
Serve with Homemade Seed Crackers and some chopped raw veggies, I've even been known to add a generous dollop to my salads or roasted veggies.
Ingredients
- 2 med Egg Plant, cut in half
- 8 cloves Garlic
- 2 tbs Tahini
- ⅓ cup Olive Oil
- ½ Lemon, juiced
- ½ tsp Cumin
- Salt, to taste
Instructions
- Place eggplant and garlic on an oven tray and drizzle with a little olive oil
- Place in a moderate oven for approximately 30 minutes until softened
- Scoop out the flesh from the eggplant and squeeze the garlic from their skins
- Place all ingredients into a blender and blitz to a fine paste (or consistency of your choice)
- Taste and adjust as required a little more salt, lemon juice or event olive oil
