Baba Ganoush (Eggplant Dip)

I often make a big batch of this beautiful dip … a fabulous ‘go-to’ recipe for easy entertaining.

Baba Ganoush (Eggplant Dip)

Serve with Homemade Seed Crackers and some chopped raw veggies, I've even been known to add a generous dollop to my salads or roasted veggies.


  • 2 med Egg Plant, cut in half
  • 8 cloves Garlic
  • 2 tbs Tahini
  • cup Olive Oil
  • ½ Lemon, juiced
  • ½ tsp Cumin
  • Salt, to taste


  • Place eggplant and garlic on an oven tray and drizzle with a little olive oil
  • Place in a moderate oven for approximately 30 minutes until softened
  • Scoop out the flesh from the eggplant and squeeze the garlic from their skins
  • Place all ingredients into a blender and blitz to a fine paste (or consistency of your choice)
  • Taste and adjust as required a little more salt, lemon juice or event olive oil
