Basil and Mint Pesto
A fabulous combination of flavours, fantastic with prawns, baked fish, chicken or tossed through vegetables.
Ingredients
- 2 handfuls Fresh Basil
- 2 handfuls Fresh Mint
- 80 g Pint nuts
- 50 g Parmesan, grated
- 120 ml Olive oil
- 1 tbs Lemon Juice
- Salt and Pepper, to taste
Instructions
- Place all ingredients in a food processor and combine well
- Adjust flavours accordingly
