Pure perfection … this surprisingly light and super delicious dressing is pure perfection and a wonderful dressing for any salad, but is particularly good on my new ‘Almyrida’ Pear and Roquefort Salad.

Basil Dressing

Make a huge batch, store in the fridge and drizzle away.
Fabulous with salads, lamb and seafood
Prep Time 10 minutes


  • 1 large bunch Basil
  • cup Olive Oil
  • 2 tsp Dijon Mustard
  • 1 tsp Manuka Honey (opt)
  • cup Water
  • Salt & Pepper to taste


  • Place all ingredients into a blender and blitz until well combined.
  • Store in the fridge in an airtight container for up to a week (if it lasts that long)
