A slightly different take on the famous English breakfast dish Bubble & Squeak. Traditionally made using all the roast dinner left-overs such as mashed potato, cabbage, carrots, sprouts, peas.
I have always loved this concept. A brilliant way to use all your left-overs whilst making a delicious, nutrient-dense and inexpensive meal for loved ones.
Bubble ‘n’ Squeak Frittata
- 2 cups Left-overs - I had Sweet potato, Zucchini, Beans, Cauliflower, Broccoli, Brussel Sprouts
- 2 rashes Bacon, chopped
- 1 tbsp Butter
- 50 g Cheese, grated
- 10 Eggs, beaten
- Using a shallow pan, fry off the veggies in some butter (I threw in some bacon too).
- Add eggs.
- Sprinkle with cheese.
- Cook in the pan to form a slight crust.
- Finish under the grill until golden brown and cooked.
