A slightly different take on the famous English breakfast dish Bubble & Squeak. Traditionally made using all the roast dinner left-overs such as mashed potato, cabbage, carrots, sprouts, peas.

I have always loved this concept. A brilliant way to use all your left-overs whilst making a delicious, nutrient-dense and inexpensive meal for loved ones.

Bubble ‘n’ Squeak Frittata

A brilliant way to use all your left-overs whilst making a delicious, nutrient-dense and inexpensive meal for loved ones.

Ingredients
  

  • 2 cups Left-overs - I had Sweet potato, Zucchini, Beans, Cauliflower, Broccoli, Brussel Sprouts
  • 2 rashes Bacon, chopped
  • 1 tbsp Butter
  • 50 g Cheese, grated
  • 10 Eggs, beaten

Instructions
 

  • Using a shallow pan, fry off the veggies in some butter (I threw in some bacon too).
  • Add eggs.
  • Sprinkle with cheese.
  • Cook in the pan to form a slight crust.
  • Finish under the grill until golden brown and cooked.
