‘No’ Butter Chicken 😋

We all love quick and easy midweek meals packed with loads of flavour and goodness. 

 

Butter Chicken

This recipe uses exceptional produce with loads of yum but no horrible nasties ... happy taste buds and tummies.
Simply serve with cauliflower rice

Ingredients
  

  • 2 tbsp Coconut oil
  • 700 g Chicken thigh fillets, cut into chunks
  • 1 cup Cauliflower florets
  • 1 cup Broccoli florets
  • 6 Asparagus spears, cut into pieces
  • 10 Green Beans, cut in pieces
  • 1 handful Spinach (or other leafy greens)
  • 1 med Brown onion, diced
  • 4 cloves Garlic, minced
  • 2 tsp Garam masala
  • 1 tsp Cardamom, ground
  • 1 tsp Coriander, ground
  • 1 rst Ginger, ground
  • 1 tsp Cumin, ground
  • 1 tsp Paprika
  • 1 tsp Turmeric, ground
  • 1 pinch Cayenne pepper (optional)
  • ½ cup Passata
  • ½ cup Chicken broth
  • 400 ml Coconut cream
  • ½ med Lemon, juiced
  • 1 tsp Salt

Instructions
 

  • Heat coconut oil in a large saucepan over medium heat 
  • Add the onion and garlic, sauté until translucent 
  • Add spices stir for a couple of minutes to release the aroma
  • Add the chicken and cook until lightly browned
  • Add the passata and broth and stir for 1 minute 
  • Add the salt, lemon juice and coconut cream, mix well
  • Add vegetables, stir well to combine
  • Cover and simmer for approx. 20 mins, stirring occasionally until chicken and veg is cooked and the sauce slightly thickens
