Going LCHF (Low Carb/Healthy Fat) meant saying goodbye to highly processed packaged products like bread, rice, pasta, biscuits, pastries, cakes and so on and I couldn’t be happier (or healthier) with my choice.
Products high in carbs, lots of hidden sugar and containing a number of poor quality ingredients were not serving me well and causing me a number of health issues.
But… whilst I happily choose not to eat conventional bread, there is the odd occasion when I just love to indulge in a slice of toast. I especially love my Sunday morning ‘cook-up’ of smashed avocado and a poached egg on a slice of toast or grilled cheese on toast for a lazy night in.
This super delicious low carb alternative… free of grains, starch and inflammatory nasties is just perfect.

'Grain Free' Cauliflower Bread
Ingredients
- 2 cups almond meal
- 1/4 cup psyllium husk
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 cup cauliflower rice
- 5 eggs beaten
Instructions
- Preheat oven to 200°C.
- Mix all dry ingredients.
- Fold in eggs and cauliflower and mix to create a smooth batter.
- Pour batter into a greased/lined bread tin and sprinkle with sesame seeds.
- Bake for about 1 hour on 200°C.
Unchanged or with healthy tidbits, this recipe is a winner!
