Healthy Ham Hock and Vegetable Soup
Versatile, super easy to prepare and packed with loads of flavour, a powerful healing food.
Ingredients
- 1 tbsp Coconut oil
- 4 cloves Garlic, minced
- 1 large Onion, diced
- 2 Carrots, diced
- 2 Zucchini, diced
- 2 Celery stalks, sliced
- 1 Turnip, diced
- 300 g Butternut pumpkin, cubed
- ½ bunch Kale, stalks removed, shredded
- 1 Ham hock (approx. 1kg)
- 12 cups Chicken broth
Instructions
- Heat oil in a large saucepan
- Add garlic and onion, sauté until tender
- Add carrot, celery and turnip, sauté a further couple of minutes
- Add ham hock and broth, bring to the boil. Reduce heat, simmer (covered) until ham hock is tender (approx. 2 hrs)
- Add pumpkin and zucchini, simmer uncovered until vegetables are tender and meat is falling from the bone (15mins)
- Remove the ham hock (allow to cool a little) remove and coarsely shred the meat (discard skin), return to the soup
- Add kale, simmer until cooked (approx. 5mins)
- Serve with cracked pepper and sprinkling of chilli flakes (or maybe some warmed crusty bread)
