Healthy Ham Hock and Vegetable Soup

Versatile, super easy to prepare and packed with loads of flavour, a powerful healing food.

Ingredients
  

  • 1 tbsp Coconut oil
  • 4 cloves Garlic, minced
  • 1 large Onion, diced
  • 2 Carrots, diced
  • 2 Zucchini, diced
  • 2 Celery stalks, sliced
  • 1 Turnip, diced
  • 300 g Butternut pumpkin, cubed
  • ½ bunch Kale, stalks removed, shredded
  • 1 Ham hock (approx. 1kg)
  • 12 cups Chicken broth

Instructions
 

  • Heat oil in a large saucepan 
  • Add garlic and onion, sauté until tender
  • Add carrot, celery and turnip, sauté a further couple of minutes
  • Add ham hock and broth, bring to the boil. Reduce heat, simmer (covered) until ham hock is tender (approx. 2 hrs) 
  • Add pumpkin and zucchini, simmer uncovered until vegetables are tender and meat is falling from the bone (15mins)
  • Remove the ham hock (allow to cool a little) remove and coarsely shred the meat (discard skin), return to the soup 
  • Add kale, simmer until cooked (approx. 5mins)
  • Serve with cracked pepper and sprinkling of chilli flakes (or maybe some warmed crusty bread)
