Hello Winter … Hello Soup Season
I simply love soup, nothing better than a beautiful big bowl of healthy and comforting yumminess on cold winter nights. ⠀

'Hearty' Chicken and Vegetable Soup
... a fabulous bowl of goodness with loads of high quality proteins, fats and healing homemade broth.⠀Versatile, super easy to prepare, packed with loads of flavour and an inexpensive meal to feed loved ones.
Ingredients
- 1 tbs coconut oil
- 4 cloves garlic, minced
- 1 large onion, diced
- 2 medium carrots, diced
- 2 stalks celery, thinly sliced
- 2 medium zucchini, diced
- 300 g butternut pumpkin, peeled, cubed
- 2 cups broccoli, cut into florets
- 1/2 bunch kale, stalks removed, shredded
- 400 g poached chicken, shredded
- 2 litres homemade chicken broth
- 1 handful parsley, chopped
- 2 sprigs thyme
- 1 bay leaf
- salt and pepper
Instructions
- Heat oil in a large saucepan
- Add garlic and onion, sauté until tender
- Add carrot, celery and bay leaf sauté a further couple of minutes
- Add broth, bring to the boil.
- Add pumpkin, zucchini and parsley reduce to a simmer uncovered until vegetables are tender (20mins)
- Add kale, broccoli and chicken simmer (approx. 5mins)
- Season to taste
Notes
Serve with cracked pepper and maybe a light sprinkling of chilli flakes
