A perfect snack for all those sweet lovers … a little something to enjoy with a cuppa.

I  don’t have a sweet tooth, but live with those who do. So here’s a healthy alternative to ultra processed, refined sugar and preservative loaded sweets, lollies and desserts floating around.

Lemony Coconut Bliss Balls

If you like lemon add a little more juice ... so easy to make and pop in the fridge to have on hand for those moments when you want to reach for something sweet.
Prep Time 30 minutes

Ingredients
  

  • 2 cups Medjool dates (pitted), chopped
  • 1 cup Raw cashews
  • 1 cup Raw almonds
  • ½ cup Desiccated coconut, plus a little more for rolling
  • 1  Lemon, zest and Juice

Instructions
 

  • Place all ingredient in a food processor and blitz until well combined (mixture should be sticky enough to roll into balls with out falling apart). 
  • Roll into bite size balls and coat with extra coconut
  • Pop in the fridge

Notes

This recipe will make about 25-30 balls (depending on the size) and will store in an airtight container in the fridge for approx. 1-2 weeks (if they last that long!)
