I don’t have a sweet tooth, but live with those who do. So here’s a healthy alternative to ultra processed, refined sugar and preservative loaded sweets, lollies and desserts floating around.

Lemony Coconut Bliss Balls
If you like lemon add a little more juice ... so easy to make and pop in the fridge to have on hand for those moments when you want to reach for something sweet.
Ingredients
- 2 cups Medjool dates (pitted), chopped
- 1 cup Raw cashews
- 1 cup Raw almonds
- ½ cup Desiccated coconut, plus a little more for rolling
- 1 Lemon, zest and Juice
Instructions
- Place all ingredient in a food processor and blitz until well combined (mixture should be sticky enough to roll into balls with out falling apart).
- Roll into bite size balls and coat with extra coconut
- Pop in the fridge
Notes
This recipe will make about 25-30 balls (depending on the size) and will store in an airtight container in the fridge for approx. 1-2 weeks (if they last that long!)
