I love to make a big batch of this amazing ‘granola’ mix to have on hand.
A fabulous combination of toasted nuts and seeds, packed with loads of goodness but low in carbs.

Low Carb Toasted Granola
Perfect as a replacement for breakfast cereal or a quick and easy healthy snack. Simply sprinkle over a dollop of greek yoghurt and a handful of fresh berries. Amazing
Ingredients
- 1 cup Pecans, roughly chopped
- 1 cup Walnuts, roughly chopped
- 1 cup Almonds, roughly chopped
- 1 cup Pepita Seeds
- ¼ cup Sesame Seeds
- ¼ cup Chia Seeds
- ½ cup Sunflower Seeds
- 1 cup Coconut, shaved
- 2 tsp Cinnamon, ground
- 1 tsp Manuka Honey (opt)
- 1 tbsp Coconut Oil, melted
Instructions
- Preheat oven at 150°C
- Mix all ingredients in a bowl
- Lay evenly on an oven tray lined with baking paper
- Roast for 15 minutes, remove, stir and return to the oven for a further 10 mins
- Allow to cool
- Store in an airtight container
