Salmon and Vegetable Frittata
A versatile and tasty, no rules meal. A great use for all those left-overs ... just add some eggs, cheese (and maybe a dollop of cream).
Ingredients
- 200 g Left over veggies: Cauliflower, Green Beans, Asparagus, Spinach, Broccoli, Zucchini and Mushrooms
- 200 g Baked Salmon (or Smoked Salmon), chunks
- 10 Eggs, lightly beaten
- 100 g Cheddar cheese, grated
- 100 ml Double thick cream (opt)
- 2 tbs Fresh herbs of choice
Instructions
- Using a shallow pan, fry off the veggies in some beautiful grass-fed butter
- Mix together eggs, cream. cheese and herbs
- Pour egg mixture over vegetables
- Sprinkle with a little extra cheese
- Cook in the pan to form a slight crust
- Finish under the grill to brown
