Salmon and Vegetable Frittata

A versatile and tasty, no rules meal. A great use for all those left-overs ... just add some eggs, cheese (and maybe a dollop of cream).

Cook Time 15 minutes
Servings 4

Ingredients
  

  • 200 g Left over veggies: Cauliflower, Green Beans, Asparagus, Spinach, Broccoli, Zucchini and Mushrooms
  • 200 g Baked Salmon (or Smoked Salmon), chunks
  • 10 Eggs, lightly beaten
  • 100 g Cheddar cheese, grated
  • 100 ml Double thick cream (opt)
  • 2 tbs Fresh herbs of choice

Instructions
 

  • Using a shallow pan, fry off the veggies in some beautiful grass-fed butter
  • Mix together eggs, cream. cheese and herbs
  • Pour egg mixture over vegetables
  • Sprinkle with a little extra cheese
  • Cook in the pan to form a slight crust
  • Finish under the grill to brown
