Slow Roasted Lamb Shank and Vegetable

... meat falling off the bone, in a sauce full of aromatic flavours, slow cooked veggies and the goodness of bone broth.
Simply serve with cauliflower mash and a few steamed greens.

Cook Time 2 hours 30 minutes
Servings 6

Ingredients
  

  • 6 lamb shanks, trimmed
  • 1 tbsp olive oil
  • 4 cloves of garlic, crushed
  • 1 med onion, peeled and diced
  • 2 med carrots, diced
  • 2 sticks celery, cut into chunks
  • 1 can chopped tomatoes
  • 2 cups homemade chicken broth
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh parsley, to serve

Instructions
 

  • Pre-heat the oven to 160°C
  • Sear the lamb shanks, then remove and set aside.
  • Place lamb shanks in roasting pan
  • Add onion, garlic, carrot, celery, tomatoes, broth and herbs and seasoning
  • Cover, place in the oven and slow roast for approx. 2 1/2 hrs, basting regularly 
  • Serve with cauliflower mash, steamed green beans drizzling with sauce
