Ingredients
16
cups
filtered water
1
cup
organic raw sugar
6
green tea bags
6
black tea bags
1
Scoby
1
cup
kombucha (from a previous batch or store bought)
Instructions
Pour 4 cups of boiling water into a jug, add tea bags and sugar, steep for 5 minutes (ensure sugar has dissolved), cool
Strain into a large sterilised glass jar, top with remaining water (12 cups)⠀
Add kombucha
Add scoby
Cover with a muslin cloth and secure
Pop in a dark, warm place
Let the fermenting process begin
Once you are happy with your flavour, remove the scoby (use for your next brew)
Transfer your brew to bottles and pop in the fridge
Notes
You are looking for a slightly sour taste which should occur around day 7-10 depending on the room temperature.
Leave for additional time if not to your taste ... my brews normally take 10-14 days
During the fermentation process your brew will form another Scoby on the surface (use for another brew)
Once kombucha is bottled you may add additional flavouring like fresh ginger, turmeric or even mint. ⠀
