Baba Ganoush (Eggplant Dip)
Serve with Homemade Seed Crackers and some chopped raw veggies, I've even been known to add a generous dollop to my salads or roasted veggies.
Egg Plant, cut in half
Salt, to taste
Place eggplant and garlic on an oven tray and drizzle with a little olive oil
Place in a moderate oven for approximately 30 minutes until softened
Scoop out the flesh from the eggplant and squeeze the garlic from their skins
Place all ingredients into a blender and blitz to a fine paste (or consistency of your choice)
Taste and adjust as required a little more salt, lemon juice or event olive oil
