Moroccan Eggs Tagine (or baked eggs) … a real family favourite.
You just can’t go wrong with this easy to throw together, nutrient dense flavour bomb.

Moroccan Eggs Tagine

Ingredients
- 6 eggs
- 2 cloves garlic, minced
- 1 long red chilli, finely diced
- 1 medium brown onion, diced
- 1 medium red capsicum, diced
- 6 roma tomatoes, chopped
- 4 rashes bacon, toughly chopped
- 2 tbs olive oil
- 4 spring onion, finely sliced
- parsley, chopped
Spice Mix
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp tumeric
- 1/2 tsp ground coriander seeds
Instructions
- In a tagine (or large fry pan), heat oil
- Add garlic, chilli, onion, and capsicum, sauté until softened
- Add bacon and spice mix, stir for a minute or 2⠀
- Add chopped tomatoes, stir and simmer (covered) for about 5 minutes
- Make wells in the cooked mixture and crack your eggs in each well
- Cover, cook eggs to your liking
- Sprinkle with spring onion and parsley
