Moroccan Eggs Tagine (or baked eggs) … a real family favourite.

You just can’t go wrong with this easy to throw together, nutrient dense flavour bomb.

Moroccan Eggs Tagine

Ingredients
  

  • 6 eggs
  • 2 cloves garlic, minced
  • 1 long red chilli, finely diced
  • 1 medium brown onion, diced
  • 1 medium red capsicum, diced
  • 6 roma tomatoes, chopped
  • 4 rashes bacon, toughly chopped
  • 2 tbs olive oil
  • 4 spring onion, finely sliced
  • parsley, chopped

Spice Mix

  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp tumeric
  • 1/2 tsp ground coriander seeds

Instructions
 

  • In a tagine (or large fry pan), heat oil 
  • Add garlic, chilli, onion, and capsicum, sauté until softened
  • Add bacon and spice mix, stir for a minute or 2⠀
  • Add chopped tomatoes, stir and simmer (covered) for about 5 minutes
  • Make wells in the cooked mixture and crack your eggs in each well 
  • Cover, cook eggs to your liking
  •  Sprinkle with spring onion and parsley
